The adzuki bean, also known as the asuki bean and the aduki bean, is one of the most delicious and also one of the more expensive of the dried beans.

A native of Japan, it is small and red with a curious keel-shaped ridge. It is a fairly recent arrival from Japan and is found mainly in health food stores. It is cooked in exactly the same ways as other dried beans, but since it is very much sweeter than most other beans its flour is much used for cakes and pastries in Japan, and the crushed bean is made into puddings and ice-cream by the Chinese. It is one of the most easily digestible of all the dried beans.
